SNOWFLAKE — Learn new recipes, techniques and skills in noncredit cooking classes this spring at Northland Pioneer College’s Snowflake/Taylor – Silver Creek Campus, 1611 S. Main St.

Cooking Classes

Instructor Lorena Telford has divided the classes into four series, based on topics and regular meeting day. You must register and pay the associated fees for each class individually. Sign up for these classes at least three days before the class starts to ensure it is not canceled due to insufficient enrollment. Register at any NPC location or by phone, 524-7459 or (800) 266-7845 ext. 7459, during regular business hours, 8 a.m. to 5 p.m. Monday through Thursday, or 8 a.m. to 4 p.m. on Fridays.

Telford has been involved in the food service/hospitality industry for over 25 years, serving as a wedding/event planner and caterer. She has spent time in England, and had the opportunity to do some catering there.

Currently owner of Lorena’s Kitchen, she specializes in over 40 gourmet jams, jellies and spreads and does catering from box lunches to full-service meals. “I love cooking. It is a passion of mine, and I am constantly studying and learning to feed my love of all things food,” she says.

In Telford’s Mom’s/Dad’s Make Aheads series you’ll actually create a meal you can take home for that evening, or to freeze for another day. This series meets on the fourth Tuesday, from 11:30 a.m. to 1 p.m. Each class costs $30 plus $12 for supplies paid directly to the instructor.

If you are new to cooking, or are looking for fast, easy, simplified meals for those busy nights, the Simplified Suppers series is for you. These recipes have been simplified, reducing hours of normal prep time. You’ll also learn some “supermarket shortcuts.” Designed for all skill levels, the class meets on the third Wednesday, from 6 to 7 p.m. Each class costs $30 plus $10 for supplies paid directly to the instructor. There will be no March class due to NPC’s spring break.

In the Ladies Who Lunch series you’ll not only learn some new techniques, but you’ll get to enjoy what you create in class. Telford will demonstrate each step, then students will repeat. She’ll also share tips for hosting luncheons. Each class costs $30, plus $6 for supplies, and meets on the first Tuesday, from 11:30 a.m. to 1 p.m.

  • February 7: Soup and Sandwich – Broccoli Cheese (reference HCT 099x 37-73996)
  • March 7: Panini Party: Roast Beef with Bleu Cheese Mouse, Turkey and Pesto, or Vegetarian (reference HCT 099x 44-73993)
  • April 4: It’s a Wrap! Chicken Salad with Pecans and Grapes or Strawberry, Spinach and Bacon Salad (reference HCT 099x 39-73994)
  • May 2: Nibbles and Nosh (Garden Tea Party) – Tea Sandwiches, Stuffed Veggies & Dessert Bites (reference HCT 099x 38-73995)

The fourth series, Couples Club, is designed as something different for date night. As a couple (or with a friend), you’ll have a chance to learn new recipes, acquire new skills and enjoy what you have created following Telford’s instructions. “Come away with ideas for more date nights while enjoying a fun, light-hearted social setting,” adds Telford. Couples Club meets on the second Friday, 6 to 7:30 p.m., and costs $50 per couple, with an additional $10 per couple for supplies.
